Food production process quality control standards

1. Purpose

Standardize and maintain the company's process inspection procedures to ensure that the company's quality system and the products covered meet the specified requirements during the production process to prevent unqualified products from flowing into the next process.


2. Scope of application

Applicable to the quality inspection of products covered by the company's quality system during the production process.


3. Responsibilities

3.1 The Quality Department determines each inspection point according to the production process.

3.2 The Quality Department is responsible for compiling the workshop process operation instructions. The workshop inspectors conduct inspections in accordance with the process operation instructions and are responsible for implementation.

3.3 Relevant production post operators are responsible for post self-inspection.


4. Workflow

4.1 Setting of inspectors and inspection control methods

4.1.1 The Quality Department is responsible for determining each inspection point and inspection item according to the production process, which should be clearly stated in the corresponding process standards

4.1.2 The Quality Department is responsible for compiling the process operation instructions, and the vice president of quality or the general manager shall approve and implement them.

4.1.3 The process operation instructions should include the following contents: 

variety, inspection items, sampling method, inspection method, inspection basis, instruments and equipment used, judgment criteria, inspection frequency, and record format.

4.2 Process Inspection

4.2.1 The workshop inspector shall make preparations for pre-production inspection and shift handover.

4.2.2 Before production, the production staff shall confirm and record the raw and auxiliary materials (including water for beverages), and the workshop inspector shall supervise.

4.2.3 During the production process, the workshop inspector shall be responsible for random inspection and record.

4.2.4 The workshop inspector shall re-inspect the semi-finished products remaining at the end of the shift and the semi-finished products of the current shift according to the process operation instructions. Only after the re-inspection is determined to be qualified can the production be resumed and the corresponding records shall be made.

4.2.5 For the semi-finished products determined to be unqualified after inspection, the production staff shall control them according to the corresponding unqualified product handling operation instructions. Avoid unqualified products from flowing into the next process and keep records.

4.2.6 For actual or potential unqualified factors, the inspector must correct them in time together with the production team leader to avoid causing more losses and keep records
